{"id":15661,"date":"2024-03-18T17:40:51","date_gmt":"2024-03-18T16:40:51","guid":{"rendered":"https:\/\/dev.imolafaenza.it\/?p=15661"},"modified":"2024-03-19T16:42:40","modified_gmt":"2024-03-19T15:42:40","slug":"__trashed","status":"publish","type":"post","link":"https:\/\/www.imolafaenza.it\/en\/local-products\/__trashed\/","title":{"rendered":"Chestnut of Castel del Rio PGI"},"content":{"rendered":"<p>Protected geographical indication of Chestnut Castel del Rio PGI is reserved to fruits produced by Castanea Sativa woods, in the biotypes of Domestic Chestnut, Nostrano Chestnut and San Michele Chestnut.<\/p>\n<p>This chestnut differs from the others because of the bigger size of the fruit, the organoleptic qualities and its shape, flat on one side and curved on the other one.<br \/>\nChestnut of Castel del Rio PGI presents a shiny red-brown skin with darker stripes, while the pulp is lighter in color, crunchy and sweet.<br \/>\nAnother difference between Castel del Rio chestnut and other varieties is the thickness of the skin: it is very thin and makes it easy to peel the fruit.<\/p>\n<h5>Cultivation techniques<\/h5>\n<p>Suitable for PGI mark are chestnut tress growing between 200 and 800 above sea level.<br \/>\nTree density should be between 75 and 125 per hectar. It is forbidden any kind of fertilisation, making the produce natural and organic.<br \/>\nMaximum production is fixed at 1.5 tons per hectar, while all lavoration processes should take place inside the production territory, with the extension of Imola municipality.<br \/>\nSanterno Valley offer ideal conditions for production: here chestnut trees can live over 400 years.<\/p>\n<h5>Cooking techniques<\/h5>\n<p>To enjoy chestnuts of Castel del Rio PGI at their best, it is necessary to cook them on embers (caldarroste), but they can also be boiled, braised or in a puree, also cooked in milk with sugar or Cognac.<br \/>\nIn patisserie, Chestnuts are used to prepare the famous marron glac\u00e8s, base ingredient for traditional desserts such as Montblanc or pies.<\/p>\n<p>Chestnut flour, with the addition of eggs, milk, sugar and anise, is used in the making of fritters, sweet ravioli, tortelli filled with chestnuts and castagnaccio.<\/p>\n<h5>Production area<\/h5>\n<p>Geographic area indicated for the production covers\u00a0<a href=\"https:\/\/www.imolafaenza.it\/en\/towns\/castel-del-rio\/\" target=\"_blank\" rel=\"noopener\">Castel del Rio<\/a>,\u00a0<a href=\"https:\/\/www.imolafaenza.it\/en\/towns\/fontanelice\/\" target=\"_blank\" rel=\"noopener\">Fontanelice<\/a>,\u00a0<a href=\"https:\/\/www.imolafaenza.it\/en\/towns\/casalfiumanese\/\" target=\"_blank\" rel=\"noopener\">Casalfiumanese<\/a>\u00a0and\u00a0<a href=\"https:\/\/www.imolafaenza.it\/en\/towns\/borgo-tossignano\/\" target=\"_blank\" rel=\"noopener\">Borgo Tossignano<\/a>.<br \/>\nPairing with wine: red wines are the best choice with caldarroste. Sweet and liquor-like wines, such as Albana di Romagna, are better paired with marron glac\u00e8s.<\/p>\n<h5>Bits of history<\/h5>\n<p>Chestnuts tree is originary of Mediterranean area. Its fruits have been an importante element in human nutrition since the Middle Ages. During XVII century, chestnut cultivation was already popular and the selling of the fruits was a strong economical source for Castel del Rio terriotory. In the first half of XIX century, the month of October hosted and important exchange market.<br \/>\nIn 1885, cultivation covered over 1450 hectares, which is about 40% of the cultivated lands on
